It looks simple but there is, in fact, a lot of work involved in building an oven because the work has to be done in stages. Dense firebricks are heavy, extremely hard, and difficult to work with. They are made from clay with a high refractory content and fired to temperatures at which other clay bodies would melt. In the construction of an oven, many of the bricks need to be cut with a diamond saw so they fit snuggly together on the inside. Allowing mortar joints on the inside would defeat the object since precious heat would escape through the joints...
